– not 1 but 2 Ways!
These simple ice cream recipes need just 2 ingredients and can be literally whipped up in 5 minutes. You don’t even need an ice cream maker.
Make it in the morning and serve home-made ice cream for tea!
All you need is fresh double cream in your fridge and a tin of condensed milk or custard in your pantry.
Method 1 – “Sweet Cream”
Double Cream & Condensed Milk in a 3:1 ratio
- 600ml Double Cream
- 200ml Condensed Milk (200g that’s usually half a tin)
- Combine and whip into soft peaks.
- Add choc chips or other, see my suggestions below.*
- Decant into a freezer proof container
- Freeze for 5+ hours.
Method 2 – “Vanilla Cream”
Double Cream & Custard (tinned or fresh served cold) in a 1:1 ratio
- 400ml Double Cream
- 400ml Cold Custard
- Combine and whip into soft peaks.
- Add choc chips or other, see my suggestions below.*
- Decant into a freezer proof container
- Freeze for 5+ hours.
Extras I like to add*
- Chocolate chips
- Smashed up Crunchie bar.
- Fudge pieces
- Nuts – hazelnuts or pistachio
- Raisins ( soaked in Rum)
- Or make it an adult affair with a measure of Baileys.
You can add any extras you like to make your favourite flavours and experimenting is fun, here are some tips I’ve learned along the way…
- Neither recipe requires an ice cream maker but both can be used in one for a delicious soft-serve version.
- Add flavourings such as choc chips by gently mixing in with a spoon so as not to knock the air out of the whipped mix.
- As these recipes aren’t churned they set really well so allow a good 30 minutes for them to soften before serving.
- Freezing in individual portions in silicone muffin cases or paper tubs (see link below for suggestions) can make serving easier.
- Adding alcohol will mean the ice cream will take longer to set.
- If you’re adding fruit such as strawberries or raspberries, let them macerate in sugar or your favourite tipple before adding to the mix to stop the water in them from becoming ice crystals.
- If you’re aiming for a ripple, I would let the vanilla mix set for an hour and then fold in your sauce to give/keep that swirl effect. Overmixing will give you a flavoured coloured ice cream but of course that’s still tasty.
- Keep it simple and just add a tasty sauce and a wafer or flake on top!
